St. Louis-Style Pizza Recipe

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2/3 cup water
  • 2 tablespoons olive oil

For the Toppings:

  • 1/2 cup pizza sauce
  • 2 cups Provel cheese (or a mix of white cheddar, Swiss, and provolone)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup sliced mushrooms
  • 1/4 cup sliced black olives
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon olive oil

Instructions:

1. Prepare the Dough:

  1. In a large bowl, combine the flour, cornstarch, baking powder, sugar, and salt.
  2. Add the water and olive oil, and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes, until it is smooth and elastic.
  4. Cover the dough with a damp cloth and let it rest for 15 minutes.

2. Preheat the Oven:

  • Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.

3. Shape the Dough:

  • Divide the dough into two equal portions. Roll each portion into a thin, 12-inch circle on a floured surface.
  • Transfer the dough to a pizza peel or a baking sheet lined with parchment paper.

4. Assemble the Pizza:

  1. Spread a thin layer of pizza sauce over the dough, leaving a small border around the edges.
  2. Sprinkle the Provel cheese (or cheese mix) evenly over the sauce.
  3. Top with grated Parmesan cheese, diced green bell pepper, diced onion, sliced mushrooms, and sliced black olives.
  4. Sprinkle dried oregano and dried basil over the toppings and drizzle with olive oil.

5. Bake the Pizza:

  • Transfer the pizza to the preheated oven (or onto the hot pizza stone) and bake for 10-12 minutes, or until the crust is crisp and the cheese is melted and bubbly.

6. Serve:

  • Remove the pizza from the oven, let it cool for a few minutes, slice into squares (traditional St. Louis-style), and serve hot.
