Ingredients:

For the Dough:

  • 2 ¼ tsp active dry yeast
  • 1 ½ cups warm water (110°F)
  • 3 ½ to 4 cups all-purpose flour
  • 2 tbsp olive oil
  • 1 ½ tsp salt
  • 1 tsp sugar

For the BBQ Sauce:

  • 1 cup BBQ sauce (store-bought or homemade)

For the Toppings:

  • 1 ½ cups cooked chicken breast, shredded or diced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ red onion, thinly sliced
  • ½ cup chopped fresh cilantro
  • 1 tbsp olive oil

Instructions:

Making the Dough:

  1. Activate the Yeast:

    • In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.
  2. Mixing the Dough:

    • Add the olive oil, salt, and 2 cups of flour to the yeast mixture. Stir until combined.
    • Gradually add the remaining flour, ½ cup at a time, until a soft dough forms. The dough should be slightly sticky but manageable.
  3. Kneading the Dough:

    • Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preparing the Toppings:

  1. Cook the Chicken:

    • Season the chicken with salt and pepper, and cook it in a skillet over medium heat until no longer pink, about 5-7 minutes per side. Let it cool, then shred or dice it.
    • Toss the cooked chicken with ½ cup of BBQ sauce, ensuring it's well coated.

    • In the same skillet, heat 1 tbsp of olive oil over medium heat and sauté the red onion slices until they are soft and slightly caramelized, about 5 minutes.

  2. Roll Out the Dough:
